Cut Out Cookies

Whew! I did it! I took a regular recipe and converted it to a gluten free one. It's not anything-else-free, but it is gluten free. I can't take all the credit, really, since good ol' Pamela's products helped out. AND they were yummy!

Gluten Free Cut Out Cookies

1 c butter softened
1 c sugar
1 egg
2 TBSP Orange Juice
1 tspn vanilla
2 1/2 c Pamela's Pancake Mix (if you do not use the pancake mix, but some other flour be sure to add 1 tsp of baking powder!)

Mix the first 6 ingredients with an electric mixer until fluffy. Gradually stir in flour by hand until well mixed (no more than 1 c at a time). Chill 2 - 3 hours in refrigerator until firm enough to roll out with a rolling pin. Preheat oven to 400 degrees F. Roll out half of the dough at a time on a floured board until 1/8 - 1/4 inch thick. Cut with cookie cutters and place on ungreased cookie sheet. Bake 6-10 minutes, until edges are light brown. Remove from sheet and cool.
