Pizza Chili

Wow wow wow. I made a complete experimental meal tonight and was quite pleased with the results. Nothing fancy, but kid approved.. so that makes a happy house all together!

Pizza Chili


1 medium onion chopped
2 cloves of garlic pressed or minced
1 can rinsed and drained black beans
1 can rinsed and drained black eyed peas
1 1/2 jars of pizza sauce (I would have tried 2 jars.. but had a half used jar, so this is what I worked with)
filled both jars with water and dumped it in (approximately 2 1/2 - 3 cups)
1 TBSP chili powder
pinch of cumin
salt to taste

Saute the onion and garlic in a small amount of olive oil. Add remaining ingredients and simmer while you cook brown rice (approximately 45 minutes or so depending on your rice).

Serve over rice. Top with shredded mozzarella cheese if you are not dairy free. Enjoy.
